Quick & Easy: Classic Chocolate Chip Cookies

My best friend is a cookie queen. She makes the most delicious American style cookies and after much needling she has been convinced to share her recipe with us in honour of National Baking Week.

Warning: these cookies are easy to make and seriously addictive so maybe only buy enough ingredients for one batch at a time!



Makes 12 cookies

  • 2 cups of flour

  • 1 cup of sugar

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1 tsp vanilla essence

  • 1/3 cup veg oil

  • 1/3 cup water

  • 1/2cup choc chips (add more if needed!)

Preheat your oven to 177 ° C. You will need two medium size bowls to for this recipe, one for the dry ingredients and one for the wet. In your first bowl mix together the flour, baking powder, salt and choc chips. Then in your second bowl mix together the sugar, vanilla essence, vegetable oil and water in a second bowl. Pour the dry ingredients into the wet bowl and mix until dough forms. Line a baking tray with waxed paper and using a spoon place dollops of cookie dough on the baking tray with some space between each. You are aiming to have 12 cookies so divide your dough accordingly. Place on the middle rack in the oven and bake for 10 minutes. Each oven varies so do keep an eye on them and take the cookies out of the oven once they start to brown.

Once out of the oven let the cookies cool for a few minutes before removing them from the baking tray and placing them on a wire rack to cool further (they'll crumble otherwise and you will feel sad). Now pour yourself a glass of your favourite nut milk and sit down with one of these bad boys.
